Whenever we go out for Italian, I usually get Chicken Alfredo...I love it. So when I learned how to make my own Alfredo sauce I was in pasta heaven! I can make this at a fraction of the cost and calories of eating out and it tastes just as good, if not better!
Alfredo Sauce:
- 1/2 cup butter
- 4 Tbsp flour
- 1/2 tsp salt
- 1 tsp nutmeg
- 2 cups milk or cream
- 1/2 cup Parmesan cheese
In a saucepan melt butter. Stir in flour, salt and nutmeg until smooth and bubbly. Add milk; cook over medium heat, stirring occasionally, until mixture comes to a full boil. Boil for 1 minute. Reduce heat and add cheese. Stir until melted. Put over pasta and top with grilled chicken.
Roasted Broccoli and Cauliflower:
Put broccoli and cauliflower florets on a baking sheet. Drizzle about 1 Tbsp olive oil over top and sprinkle 1/4 cup of Parmesan cheese and salt and pepper. For a kick, add 1 tsp red pepper flakes. Toss with your hands until all veggies are covered. Bake at 375 degrees for about 30 minutes.
