Beef Enchilada Casserole
- 1 lb ground beef
- 1 can green chilies
- 1 (10 oz) enchilada sauce
- 1 can tomato soup
- about 6 flour tortillas or 12 corn (I prefer the corn)
- 1 can corn
- 1 can black beans
- 2 cups shredded cheddar cheese
In skillet, brown ground beef; drain. Stir in green chilies, enchilada sauce and tomato soup; set aside. Line the bottom of a greased 9x13 pan with 2 tortillas (or 4 if using corn) cut to fit. Cover with 1/3 of the meat mixture; top with 1/2 of the corn and beans; sprinkle with 1/3 of the cheese. Repeat layers once - tortillas, meat, corn & beans, cheese - then top with remaining tortillas, meat and cheese. Bake uncovered at 350 for 30 minutes.
